This article presents the results of an evaluation of "Bacisetsin" and "MK" probiotics effect on the development of meat quality in broiler goslings, their internal organs development and serum enzyme levels. It was found that the eviscerated carcass weight of broiler goslings fed the probiotic "Bacisetsin" at 63 days of age was 2457.5 g, which is 20.7% higher than the control. The carcass weight of broiler goslings fed with "MK" probiotic was 0.2% less than that of the intact birds. When assessing meat quality, it was revealed that in broiler goslings of the 1st experimental group the yield of breast muscles to carcass weight was the highest, amounting to 8.78%, which is 0.66% more than in the 2nd experimental group and 1.53% more than in the intact birds. The highest yield of thigh muscles to carcass weight was in broiler goslings of the 2nd experimental group 8.61%, which is 1.4% more than in the intact group and 1.77% more than in the 1st experimental group of broiler goslings. The broiler goslings fed with "Bacisetsin" had a higher relative liver weight - 2.44% in relation to live weight; In broiler goslings fed "MK", the weight of the glandular stomach was 0.46%, the muscular stomach - 4.09% and the intestine - 6.93%. According to the results of biochemical analysis of blood serum at 63 days of age, it was established that in the blood serum of intact goslings, the activity of alanine aminotransferase and aspartate aminotransferase was significantly higher, amounting to 76.7 ± 6.98 U/L and 138.3 ± 7.29 U/L, respectively, which was 20.8-30.9% and 35.9-50.5% (p < 0.05-0.01) higher than the levels in the experimental groups. The content of alkaline phosphatase in broiler goslings of the experimental groups exceeded the similar value of the control by 14.8% and 13.9%, respectively.
